I have just one concern, although I’m trained as plant molecular biologist, in my current postdoc I do not do plant biology anymore. This change of direction in my career concerns me a little bit about applying to NIW as a plant molecular biologist.

As your current work is related to the skills that you developed as a plant molecular biologist, it should not be an issue that your current work differs from your past work.  The USCIS does not expect researchers to continue to work in precisely the same field throughout their careers.
